Bolognese Sauce

simple yet delicious

I was craving some spaghetti bolognese and so I decided to make some! Here’s how I make this delicious time consuming sauce! :)

I like to use white wine in my bolognese sauce. I feel like it gives more of a subtle yet complex depth to it? Rather than the heavy and strong feel of a red.

Also, I read of some people adding nutmeg or even fish sauce to add some umami and depth! I definitely want to try making my sauce next time with those additions, but perhaps separately?

Ingredients

4 ounces pancetta, diced
3 celery stalks, finely diced
2 carrots, finely diced
1 onion, finely diced
1 pound ground beef, I used 90/10
1 tablespoon tomato paste
1 cup white wine
28 ounces whole-peeled San Marzano tomatoes, crushed with hand
salt and pepper, to taste
Olive oil


Directions

  1. Fine dice your vegetables: 3 celery stalks, 2 carrots, and 1 onion. Set aside.

  2. Heat a large pot or dutch oven over medium heat. Add olive oil and once sufficiently hot, add your 4 ounces pancetta. Cook until the pancetta gets slightly crispy and releases oil. Then add your diced vegetables. Season with salt and pepper then cook for a few minutes until the vegetables soften and become translucent.

  3. Now add 1 pound ground beef and season it with salt and pepper as well. Break up the beef with a wooden spatula and then mix the beef with the vegetable mix and cook until the beef is sufficiently browned. Add your tablespoon of tomato paste and cook the paste into the mixture for a minute or so. Then add 1 cup white wine and let it simmer for a minute or so.

  4. Get your 28 ounces tomatoes and hand crush them into the mixture pouring in all of the tomato sauce from the can. Mix everything together and season with a bit more salt and pepper.

  5. Once everything comes to a boil, lower the heat to low and let it simmer uncovered for 1-1.5 hours. Make sure to give it a mix every so often.

  6. Then add 1 cup milk to the sauce and let it simmer for another 1-1.5 hours. Make sure to taste and season with salt and pepper accordingly.

  7. Boil pasta of preference and lather the pasta with your sauce. Top with grated parmesan cheese and Enjoy!
