Keto Kimbap

simple, easy, and low carb!

I was craving kimbap/gimbap but wanted something with a bit less carbohydrates, so I made these keto kimbap! Instead of rice, you use strips of cooked egg which ends up making a light but filling roll. You can change up what you fill the roll with.

I like switching up the meat with either sausage, fish cake, or beef and you can add some seasoning/sauce if you prefer a stronger flavor. You can also add other fillings like cucumber, spinach, kimchi, lettuce, and even cheese! So many options to choose from! :D

Ingredients
makes 3 rolls

6 eggs
4 perilla leaves (kkaennip 깻잎)
Pickled radish (danmuji 단무지)
Pickled burdock root (우엉)
1 large carrot
2 cans tuna
Kewpie mayonnaise
3 sheets of gim (roasted seasweed 김)
1/4 red cabbage
Oil
Salt and pepper


Directions

  1. Crack 6 eggs into a bowl and season with salt and pepper. Set aside. Cut your carrot into matchsticks. Then shred your red cabbage into thin slices. Add two cans of drained tuna into a bowl. Season with mayonnaise, salt, and pepper. Mix and set aside.

  2. Lightly oil your pan over medium heat. Add 1-1.5 ladle of the eggs into the pan and spread the egg around evenly. Cook the eggs until it is almost no longer runny. Flip the egg and heat it for a few seconds then set the egg aside. Repeat with the rest of the eggs.

  3. Lightly oil your pan again over medium heat. Add your carrot matchsticks and season with salt. Stir fry the carrots until they soften. Remove from heat.

  4. Roll up all of your cooked eggs and cut the egg into thin strips.

  5. Place a sheet of gim onto a rolling mat (shiny side down). Add a third of the egg strips onto 3/5th of the gim in an even layer. Place the sauteed carrots and shredded red cabbage on top in a line. Then cover with two perilla leaves. Top the leaves with a line of the tuna along with the pickled radish and burdock root. You can add more of these two for a bigger punch of flavor. Press the kimbap into a tight roll.

  6. Repeat with the rest of the ingredients. You can brush your rolls with some sesame oil if you’d like. Cut the rolls into pieces and enjoy!
