Furikake Chex Mix

Do you know what furikake is? It’s a savory-sweet condiment consisting of sesame seeds, dried fish flakes, nori seaweed, and potentially so much more (depending on what type of furikake you have)! It’s salty yet sweet and is typically sprinkled over rice to make it taste even more delicious. However, in this case, we sprinkle it over chex mix! The furikake adds such a nice savory umami to the snack which elevates it to another level. It originated in Hawaii and is a quintessential Japanese-American fusion snack. Once you grab a handful, it’s hard to stop eating it!

I used JustOneCookbook’s recipe. I only changed a few things like using corn syrup instead of brown rice syrup and adding more of the green pea snack. You should definitely check her recipe out for better instructions and details!

Ingredients

1 stick (1/2 cup) unsalted butter
1/2 cup (100 grams) sugar
1/4 cup (60 milliliters) oil
1/2 cup (100 grams) corn syrup
2 tablespoons soy sauce

4 cups (1 liter) rice chex
4 cups (1 liter) corn chex
4 cups (1 liter) honeycomb cereal
4 cups (1 liter) Bugles corn snack
2 cups (500 milliliters) pretzels
~134 grams Japanese roasted green pea snack
1 jar nori komi furikake


Directions

  1. Preheat your oven to 250 degrees F.

  2. Melt ½ cup unsalted butter over medium heat. Lower the heat to low and add ½ cup sugar, ¼ cup oil, ½ cup corn syrup and 2 tablespoons soy sauce. Mix everything together and heat until the sugar is fully dissolved. Remove from heat and set aside.

  3. In a large aluminum pan, combine 4 cups rice chex, 4 cups corn chex, 4 cups honeycomb cereal, 4 cups bugles corn snack, 2 cups pretzels, and 134 grams roasted green peas snack. Pour the syrup over everything and use two spatulas to mix everything together until everything is fully coated. Then sprinkle one whole jar of furikake over the chex mix and mix again making sure each piece is adequately coated in the furikake.

  4. Bake in the oven for 1 hour. Take the chex mix out every 15 minutes to give it a mix.

  5. Once baked, let the chex mix cool completely. As it cools, be sure to mix it every so often so that it does not stick together. Once completely cool, store in an airtight container and enjoy!
