Bruschetta

so simple but so packed with flavor

It’s always great having a dish in your pocket that is simple to make with minimal ingredients but so delicious! I consider this one of them. Bruschetta is a dish that is basically marinated tomatoes on toast but it’s just so so good. And it’s perfect for summer as it’s been so hot in Los Angeles lately.

Did you know bruschetta comes from the word bruscare which means to toast. So bruschetta actually refers the the toasted bread and not the tomato mixture. I always thought that it meant the diced tomatoes but bruschetta could actually come with all different kinds of toppings and not just the tomatoes.

Also, in America, we tend to pronounce bruschetta as how it is spelled with a CH. But I heard that it’s actually pronounced with a K sound so that it’s more like brus-k-etta.

Ingredients

1 lb tomatoes such as roma or campari
6-7 fresh basil leaves, chiffonade
1 garlic clove, pressed
Olive oil, to taste
Balsamic Vinegar, to taste
Salt and pepper

Bread of choice
1 garlic clove, optional


Directions

  1. Slice your tomatoes and remove any seeds or wet filling. Then cut them into a dice. Place into a bowl with pressed garlic, olive oil, balsamic vinegar, basil, and salt and pepper. Mix everything together and let sit for 15-30 minutes so that the tomatoes absorb all the flavor.

  2. Once done marinated, slice your bread of choice and toast in the toaster oven. Or you can brush olive oil on the slices and grill on a pan. Once toasted, rub a garlic clove on the bread then top with your tomato mixture.

  3. Enjoy!
