Kiwi Lime Pie

like a key lime pie but with a twist!

Did you know there’s a Friends’ episode where Ross eats Monica’s Kiwi Lime Pie not knowing there’s kiwi in it? He’s allergic and doesn’t have a good reaction. haha. However, my kiwi lime pie will definitely say, I contain kiwis! I saw these beautiful RubyRed kiwis in the market and had to make something with them! So here’s this pie. Or is it a tart? What’s the difference??

Unfortunately my dad ate most of my red kiwis! He didn’t know that I was saving them to bake with and I forgot to tell him. I searched all the markets near me but they somehow just all disappeared! So I decided to make this pie/tart with all three different types of kiwis!

Ingredients
I used a 9-inch tart pan

Kiwi Lime Curd
2 kiwis
1/2 cup lime juice
1/2 cup sugar
1 tablespoon corn starch
4 eggs
3 egg yolks
Pinch of salt
6 tablespoons unsalted butter, cubed

Pie Crust
250 grams Biscoff cookies or Graham crackers
Pinch of salt
6 tablespoons unsalted butter, melted

Topping
Kiwis (~5-7)


Directions

  1. Kiwi Lime Curd
    -Puree two kiwis with 1/2 cup lime juice in a blender. Set aside
    -Add 1/2 cup sugar and 1 tablespoon corn starch to a pot and mix them together. Then add 3 egg yolks and 4 eggs, along with the lime zest, pinch of salt, and the kiwi lime puree. Mix everything together until combines.
    -Transfer your pot to a burner and heat over medium-low heat while whisking constantly. Cook the curd until it thickens and start to boil. Remove it from heat and then add 6 tablespoon unsalted cubed butter. Mix until the butter is fully melted.
    -Strain your curd through a strainer to get rid of any kiwi seeds and potentially curdled eggs. Cover with plastic wrap directly touching the surface of the curd and refrigerate until needed.

  2. Cookie Crumb Crust
    -Preheat your oven to 350 degrees F.
    -Grind 250 grams Biscoff cookies in a food processor or crush them with a rolling pin. Transfer to a boil. Add a pinch of salt along with 5 tablespoons unsalted melted butter. Mix everything until fully combined.
    -Transfer your crumb mixture into a 9-inch tart pan and press the crumbs together to form a cohesive and even crust.
    -Bake the crust for around 10 minutes.
    -Let it cool completely.

  3. Assembly
    -Once the crust is completely cool, transfer your curd into the curst. Smoothen the top so that it is completely flat.
    -Slice your kiwis into slices and arrange them on top of your pie/tart.
    -Refrigerate your pie/tart for a few hours to ensure that the curd completely sets.
