Chocolate Earl Grey Donuts

My friend came back from a trip to Portland and told me that the best thing she ate on the trip was a baked chocolate earl grey donut. She described the flavor profile and asked if I could recreate it for her. Since it will be her birthday soon, I happily obliged! So, here’s my attempt at making some chocolate earl grey donuts. She wanted them less chocolate with more of an earl grey taste profile so hopefully I pulled it off!

Ingredients
Makes 12 donuts
2 donut pans

Donuts
2 cups (~250 grams) all-purpose flour
1/2 cup (~50 grams) cocoa powder, sifted
1/2 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
4 tablespoons (1/4 cup) unsalted butter, melted
2 teabags (~5 grams) earl grey tea, ground
2 large eggs 1 cup (~220 grams) brown sugar, packed
1 cup (~240 milliliters) buttermilk

Earl Grey Glaze
1/3 cup (~80 milliliters) milk
2 teabags (~5 grams) earl grey tea
2 cups (~240 grams) powdered sugar, sifted

Directions

  1. Preheat the oven to 350 degrees F.

  2. Donut Batter
    -Heat 1/3 cup milk to a simmer then pour the milk into a small cup with 2 teabags of earl grey tea. Let this sit to brew while you work on everything else.
    -Add 2 cups flour, 1/2 cup sifted cocoa powder, 1/2 teaspoon salt, 1 teaspoon baking powder, and 1/4 teaspoon baking soda to a bowl and whisk together.
    -Melt 4 tablespoon unsalted butter in a pan then add 2 teabags worth of earl grey tea into the butter to brew for a bit. Crack and break up 2 large eggs in a bowl. Then add 1 cup packed brown sugar to the eggs and whisk them together. Now add 1 cup buttermilk and the tea butter to the egg sugar mixture and whisk them all together.
    -Add the egg mixture (wet ingredients) to the flour (dry ingredients) and fold everything together just until no streaks remain. Transfer the batter to a large piping bag.

  3. Spray your donut pans generously with cooking spray. Then pipe the batter into your pans until they are 3/4 of the way full.

  4. Bake the donuts for 9-10 minutes until a toothpick comes out clean when poked into the thickest part.

  5. Once done baking, let the donuts cool in their pan for 5 minutes. Then flip the pans and remove the donuts onto a cooling rack to cool completely.

  6. Earl Grey Glaze
    -Sift 2 cups powdered sugar into a bowl. Then add most of your earl grey milk (from the beginning with the teabags removed). Whisk together and add the rest of the milk if you want the glaze looser.

  7. Dip the top of each donut into the glaze and set them onto a cooling rack with parchment paper underneath to catch the glaze that will drop down. Wait for the glaze to completely harden, then enjoy!
