Pickled Tomatoes
Trader Joes used to have an orange muscat champagne vinegar that my family loves. My mom would then use that vinegar to make these delicious pickled tomatoes that would pop with so much flavor! A burst of bright sweetness and refreshing sourness. However, TJ discontinued the product… But it’s ok because we can still make something similar! This dish is super easy to make but makes such a great starter or side for any meal!
Furikake Chex Mix
Do you know what furikake is? It’s a savory-sweet condiment consisting of sesame seeds, dried fish flakes, nori seaweed, and potentially so much more (depending on what type of furikake you have)! It’s salty yet sweet and is typically sprinkled over rice to make it taste even more delicious. However, in this case, we sprinkle it over chex mix! The furikake adds such a nice savory umami to the snack which elevates it to another level. It originated in Hawaii and is a quintessential Japanese-American fusion snack. Once you grab a handful, it’s hard to stop eating it!
Tomato Galette
I saw these heirloom tomatoes at the grocery store and had to try using them so I turned them into one of my favorite and easy-to-make baked goods: a galette! To add more flavor, I also added a layer of sun-dried tomato pesto with olives. It’s a delicious savory and flavorful baked good!
Keto Kimbap
I was craving kimbap/gimbap but wanted something with a bit less carbohydrates, so I made these keto kimbap! Instead of rice, you use strips of cooked egg which ends up making a light but filling roll. You can change up what you fill the roll with. I like switching up the meat with either sausage, fish cake, or beef and you can add some seasoning/sauce if you prefer a stronger flavor.
Bomdong Bibimbap (봄동 비빔밥)
This dish was actually popular years ago yet made a resurgence in popularity. Bomdong is a delicious spring cabbage that’s quite hard to find. So I substituted it with young napa cabbage.
Butter Tteok (버터떡)
I feel like it was just yesterday when Dubai cookies were super popular in Korea. And before that was salt bread! Yet, there’s already a few new food trends popping up there, one of which is Butter Tteok. It’s also known as Shanghai Butter Mochi and it’s so simple to make yet delicious to eat with its chewy crispy texture!

A treat that I’m a huge fan of is the simple but delicious rice krispies treat! It takes minimal ingredients and when done well is so good. And it’s not even hard to make it well! :D Here’s how I make my rice krispies treats and I also included two flavored versions that I love to make!
Granola
I love when granola contains crunchy clusters and so I’ve been searching for a way to guarantee them whenever I make it. That’s when I found this recipe by Serious Eats which has you soak the oats in buttermilk beforehand. Ever since making this granola, my parents requested that I always have a batch made. It’s that good! :D

I love persimmons. They’re a classic fall and early winter fruit and since it’s already the end of December, that means they’re going away soon! So, this year, I decided to make some jam out of this delicious fruit with various ways of enjoying the end result! :D
